Zucchini Burgers

Another tasty way to use the summer harvest

  • 1 pound zucchini, chopped finely

  • 1/2 large onion, chopped finely

  • 3/4 cup italian seasoned bread crumbs

  • 2 large eggs or flax egg equivalent

  • 1/4 cup nutritional yeast (or parmasean cheese)

  • 2 cloves garlic, minced

  • 1 Tbsp parsley, minced,or 1/4 teaspoon dried

  • 1 Tbsp fresh basil, minced, or 1/4 teaspoon dried

  • 1 Tbsp fresh oregano, minced or 1/4 teaspoon dried

preheat oven to 450 degrees. oil a 11X 17 baking sheet. press the excess liquid from the zucchini with a paper towel. Mix all ingredients together. Form into patties. and bake for 15 minutes or until heated through.
